Ready for a blast from the past?
I’ve decided that, as part of my frugal reset, that I’m going to share my weekly meal plan on here for a couple of weeks – maybe longer depending on how much I enjoy writing these posts and if I feel like I need the accountability that I get from sharing something with you all.
I’ve been meal planning again for a couple of weeks now and I’m starting to get everyone on board which is making it easier to stick to. It helps that I try and include meals that I know everyone enjoys and I focus on that more than choosing cheaper meals if that makes sense.
I also make sure that I include plenty of salads and vegetables as we’re trying to be much more health conscious at the moment with more healthy food and more exercise happening for us all. Most meals have either a salad of lettuce, tomato, cucumber and red onion on the side or a side of veggies on everyone’s plates.
My current favourite veggie sides option are those packs of veg that you can pop in the microwave for three minutes – there’s one that’s carrots, sweetcorn and broccoli which everyone loves. I am a huge fan of frozen veggies for ease and convenience, they’re just as healthy as fresh vegetables, if not healthier, as most are flash frozen at the point of picking which locks in all the good stuff.
Also, there are some nights when I don’t eat the same meal as everyone else but you can pretty much assume that if a meal is not diabetic friendly that I will have something simple like chicken, roasted tomatoes and salad. It’s my go-to meal for when I need something quick and easy that works for me.
Monday – Gammon and Eggs
I bought a gammon joint for a fiver that I’ll be roasting in the oven this afternoon and serving it sliced with a couple of fried eggs (bought from our local farm shop) for tea for my partner about 4pm as he’s on nights tonight. I’ll also be making some sandwiches using some of the leftovers for his packed lunch tonight too. I’ll have mine a little bit later with some eggs and maybe some roasted tomatoes.
Tuesday – Mince and Yorkshire puds with dumplings
You can’t beat mince and Yorkshire puds for a filling, cheap and tasty meal. I do my minced beef and onions in the slow cooker and pad it out with a bit of grated carrot, some peas and if I have a tin of sweetcorn in the cupboard then that goes in too. I buy the 500g pack of lean minced beef from Asda for £3.89 and that will do a meal for both of us and then at least a packed lunch for my partner who’s on nights again. It will likely do a lunch for me on Wednesday too.
I can make my own Yorkshire puddings but I actually have some Aunt Bessies in the freezer from the Iceland 10 for £10 offer not long ago so I’ll use them.
Wednesday – Burgers and wedges
Super quick and simple tea tonight as we have a few jobs that we need to get done. It’s genuinely just burgers from the freezer in buns for my partner and burgers with no bun for me. I’ll do wedges for him and some roasted tomatoes and salad for me.
Thursday – Pizza night
We’ve not had homemade pizza for a while so I think that’s what we’ll do for tea on Thursday night. Fun, tasty and it’s an activity that will get the kids in the kitchen cooking. I’ll be having something chicken based so I’ll cook my chicken ahead of time and slice some off to use in the pizza toppings.
Friday – Spaghetti bolognaise
This is the easiest meal to cook for everyone and it always goes down well with empty plates all around. I am going to be honest here and say that I use a jar of pasta sauce from Asda (69p) with my mince rather than making the bolognaise sauce from scratch as I used to but that’s because everyone prefers the smooth sauce to my version. I don’t pad this out with anything as it’s spotted within seconds but I do make sure that there’s a salad on the side with some garlic bread.
Saturday – Chicken wraps with spicy rice and salad
I think we’ll be out for most of the day on Saturday so I was planning to cook some chicken quickly when we get back and use the leftovers from the salad from last night to make some chicken wraps. I can do that in no time but I’d love to try and make some of my nandos style spicy rice as I’ve not made that in forever.
Sunday – Steak and chips
Sunday night is date night so we’re having a nice tea. We’d usually go out for a meal but instead, we’re going to stay in and watch a film and have a posh tea. 😁
And that’s what we’ll be eating this week!
