As part of my frugal reset, I’m going to share my weekly meal plan on here for a couple of weeks – maybe longer depending on how much I enjoy writing these posts and if I feel like I need the accountability that I get from sharing something with you all!
I’ve been meal planning again for a couple of weeks now and I’m starting to get everyone on board which is making it easier to stick to. It helps that I try and include meals that I know everyone enjoys and I focus on that more than choosing cheaper meals if that makes sense.
I also make sure that I include plenty of salads and vegetables as we’re trying to be much more health conscious at the moment with more healthy food and more exercise happening for us all. Most meals have either a salad of lettuce, tomato, cucumber and red onion on the side or a side of veggies on everyone’s plates.
Monday – Slow Cooker Corned Beef Hash
Corned beef hash was something I thought I’d have to stop eating when I was diagnosed as diabetic as there’s so many carbs in it due to it being pretty much just potato and corned beef. I thought I’d give it a go with less potatoes and more other veg in there to pad it out so for tea today is a low carb version of corned beef hash carrots and cauliflower as well as a smaller than usual amount of potatoes.
Tuesday – Burgers and Salad
This is my quick and easy go to tea when we have jobs to do on a night – my partner has burgers in buns and I just have them on their own or maybe even with an egg on top. We have plenty of salad and I have my favourite side dish at the moment which is roasted tomatoes.
I know we have a couple of things to do after work on Tuesday and anything that takes too long when we’re running about will mean that we’ll be tempted to get a quick takeaway.
Wednesday – Chicken with roasted tomatoes and salad
This is honestly my go-to meal at the moment as it’s perfect for me as a diabetic. I could eat this every night and still enjoy it every night with no drama about repetition as it’s a meal I enjoy and one that I know doesn’t spike my blood sugars on a night. I often have it when you see meals on our meal plan that aren’t diabetic friendly as I can’t subject everyone in the house to the low carb meals that I need to have on a regular basis.
I can often make diabetic friendly versions of meals that can work for me as well as everyone else or I can tweak something that everyone else is having but every now and again there’s a full diabetic friendly meal on the menu and this is it for this week.
Thursday – Tacos with rice and salad
This is kid-style tacos rather than what you would usually expect when someone says it’s tacos for tea, There’s very little spice, no salsa or sour cream and not even a spoonful of guacamole in sight but what there is, is a big pan of mince with a small amount of taco seasoning added and bowls filled with lettuce, cucumber, onion, peppers and grated cheese. It’s all served with wholemeal wraps and some rice.
I try and add a little more spice and taste to the mince every time I make this to try and make it a more authentic version of tacos – last time, I even added a bowl of refried beans which I love but they were untouched. 😁
Friday – Chicken and tomato pasta with garlic bread
A simple pasta dish with some tomato sauce and chicken added is always a win in this house – I made a small portion of it once as a side to some french bread pizzas that we made and the plates were wiped clean so now I make bigger portions and it’s the main event with some garlic bread and salad to go with it.
Saturday – BBQ pulled pork
This isn’t the simplest meal to cook but it’s well worth the effort, especially when it’s served with jacket potatoes. I made this a few weeks ago and it made tea for us both, a night shift packed lunch and a small lunch for me the next day too!
Sunday – Chicken Dinner
It is what it says it is – a Sunday dinner with roast chicken, Yorkshire puds and lots of veg. I’m planning this because my partner is working 6am – 6pm this Sunday and I would like to have a nice meal on the table for him after a hard day’s work. I’m off on Sunday so I have the time to do something that takes a bit longer to make and I’ll enjoy the time in the kitchen.
And that’s what we’ll be eating this week!
