I work on a Saturday about once a month usually and I always find on those weekends, because I only have the Sunday off, I’m determined to make Sunday a great day. Today’s no exception and we’ve started the day in the best possible way – with cinnamon toast for breakfast.
It’s more like cinnamon eggy bread really but it’s absolutely delicious and this morning, Master Frugal decided he wanted to make it himself so I didn’t even have to make it (although I did do the actual cooking).
Cinnamon toast is one of those things that most people know how to make but rarely do so I’m going to share my version of the recipe with you today and you can all thank me later. 😉
Cinnamon Toast
2 large eggs
2 tbsp milk
1 tbsp brown sugar
1 tsp cinnamon
4 slices of bread – the thicker the better
Olive oil / butter
You can add more or less of the cinnamon and the sugar according to how sweet you want it – we added and extra teaspoon of cinnamon this morning by accident and it was really nice.
Beat the eggs and the milk together in a bowl.
Mix in the sugar and the cinnamon.
Cut each slice of bread into quarters and dip four quarters at a time in to the eggy mix.
Heat some oil or butter in a frying pan and then add the eggy bread to the pan.
It can cook very quick and burns quick when it’s ready so keep a close eye on it – when one side is golden brown, turn it over and cook the other side.
I like to put mine on a piece of kitchen roll for a minute when it’s ready to drain any oil.
I leave it on the kitchen roll while I cook the next batch.
