What do you do when you have some bananas to use up and a bag of pistachios? Obviously, you make Pistachio and Banana bread! 😂
This Pistachio and Banana bread is a great twist on what’s become a bit of a classic recipe over the last 12 months here in the UK. It’s easy to make, super tasty and gives you a chance to use up bananas that are on the turn!
The only thing I will say is that shelling pistachio nuts is NOT my favourite way to spend a Sunday morning – honestly, my thumbs are still sore a couple of hours later! And my 300g bag of pistachios ended up as just 100g of actual ground pistachios so I didn’t even get to make the cookies I was hoping to make alongside the banana bread! I have no idea how much ready shelled pistachios cost but I can tell you that my thumbs would recommend looking into it or getting te kids on the case with the shelling! 😂
It might look a little bit brown on the outside but it really does taste amazing – it’s just so moist inside that it takes a little longer to cook than a normal banana bread loaf but it’s not burnt, just well done!

Ingredients
- 150g sugar
- 150g butter or margarine
- 2 large eggs
- 175g self-raising flour
- 1 tsp baking powder
- 2 caps vanilla extract
- 3 ripe bananas, mashed
- 100g Pistachio nuts, super finely chopped
Instructions
- Preheat the oven to 200 c and line a loaf tin with baking parchment.
- Cream the butter and sugar together until they're looking light and fluffy.
- Beat in the eggs and the vanilla essence.
- Add in the flour, bit by bit, folding it in until it's combined.
- Gently stir through the mashed banana and crushed pistachios.
- Spoon the mix into your baking tin and pop in the oven.
