Guess what? After more than two months of being ill and four (possibly 5) courses of antibiotics and steroids, I think I actually feel better! I have gone a whole day without having a mad coughing fit and I have my voice back enough that I can actually hold a conversation without squeaking at some point. This weeks meal plan reflects the fact that I finally feel able to cook properly again - we've had lots of slips up recently where I have been too tired/ill/miserable to cook so we've had more ready meals and takeaways lately than I would like to admit but in my defence, I just haven't … [Read more...]
Family Friendly Frugal Meals – Homemade Fishcakes….
I went to the supermarket this afternoon with my little shopping list having planned our meals for this coming week but when I saw the overflowing reduced section I had a complete rethink and changed my plan completely based on the bargains I got. I'm really pleased as we have some lovely meals coming that we wouldn't normally eat due to the prices they usually are....Sunday - Homemade Fishcakes, chips and mushy peas (see below) I managed to pick up some Haddock for 59p for two fillets which made enough for us all- Bargain!Monday - Homemade chicken nuggets and potato wedges for the … [Read more...]
Cooking With Kids – Homemade Ice Lollies….
I know it's been a while but I've decided to bring back the Cooking With Kids linky and we're kicking it back off with homemade ice lollies, which I know don't technically class as cooking but you make them in the kitchen and you eat them which is good enough for me and to be honest, I could do with a bit of inspiration so I'd love as many people as possible to join in so I get lots of yummy homemade ice lolly inspiration in time for the Summer.... We made our ice lollies with powdered strawberry milkshake which we made according to the instructions on the pack and added a few more scoops … [Read more...]
Family Friendly Frugal Meals – Sausage Pie….
After last weeks attempt to follow the Sainsbury's Feed your family for £50 challenge, I've decided that we do need a bit of variety on our menu. Apparently nine out of ten people make the same eight meals over and over again and looking back at my recent menu plans it looks like I'm one of those nine. Not that there's anything wrong with that but we did enjoy the variety of last week so I'm going to try and introduce some new meals to my rather limited repetoire....Monday: Sweet and sour chickenTuesday: Macaroni cheeseWednesday: Jambalaya Thursday: Sausage pie (see … [Read more...]
Family Friendly, Frugal Meals – Chilli….
Inspired by the lovely Jen at the Madhouse whose brilliant article about feeding your family on £50.00 a week has just been published in the Guardian, I'm determined to reduce the amount of money that we spend on food each month. We have a grocery budget of £250.00 a month at the moment which is for 2 adults and 2 children. This covers all of our meals at home, packed lunches for me and the kids as well as all of our other household stuff. We used to be pretty good at sticking to the budget but lately I've been so busy that I haven't been doing our shopping online or been meal planning as … [Read more...]
Magic Mince….
When I first started meal planning, I found it a bit daunting - the idea of cooking something from scratch every night was a bit much for me and I was sure my limited recipe repertoire would meant we'd be eating macaroni cheese at least 5 nights a week. But then I discovered the magic of making double whenever I made something and freezing some for next time. Right now, crammed into my freezer, I have a big lasagne, a fish pie, a cottage pie and lots of single portions of meal leftovers (all home made) so that I can make a quick and easy tea when I get in from work. I really could do with … [Read more...]
