Bursting Blueberries….
We managed to buy some bargain blueberries from the shop tonight - a big punnet reduced to 65p. I was planning to use them to make something exotic and different but in the end we just made plain old boring muffins! All you need to recreate my delicious little muffins is: 75g butter (softened) 75g sugar 2 teaspoons baking powder 1 egg, beaten 200g plain flour 125ml milk 100g blueberries Gradually add the sugar and the egg to the butter Mix 1 tablespoon flour with the blueberries and put to one side. Parmo and Creamed Cabbage….
Who knows what a Parmo is? You probably won't unless you've spent some time in the North East as it's a local 'delicacy' round here, I'll tell you what it is if you promise to keep an open mind as it tastes way better than it sounds. It's a chicken escalope coated in breadcrumbs, topped with bechemal sauce and then cheese. Anyone who knows me knows how much of a cookbook freak I am, I have loads but hardly ever use them for recipes - I just like to look at the pictures and dream.... Who needs Dolmio….
In an effort to be even more of a perfect Domestic Goddess, I have just made my own tomato sauce, from scratch, without any help, on my own!It's super easy and cheap! I'm not good with technical terms but I just put some chopped onions and chopped garlic in a pan with a big glug of olive oil and cooked them until the onions were soft.
