Last week, we were invited to a BBQ with the Madhouse clan and after being put in charge of dessert and sides, we made the most amazing Rocky Road that we’ve ever had. Today, I’m going to share that Rocky Road recipe with you so that you can experience it for yourself.
The beauty of this Rocky Road Recipe is that you can change it up to match what you have in the cupboards and what you know your family will enjoy. We went for the usual suspects of biscuits and marshmallows but with the addition of some crushed pistachio nuts because we had some in and I knew the kids would love pistachio rocky road.
Mr Frugal got himself involved in this one and took charge of the crushing of the biscuits and the pistachios which is the reason I no longer have my little mini-blender – he got a bit enthusiastic with the crushing and somehow snapped the little tub! Awesome, hey?

The best Rocky Road Recipe EVER...
This is honestly the best Rocky Road recipe you will ever find! We made ours with ground pistachio nuts which made it even better!
Ingredients
- 200g digestive biscuits, crushed
- 135g butter
- 200g chocolate
- 3 tbsp golden syrup
- 100g mini marshmallows
- You can also add around 100g in total of the following:
- Dried fruit
- Nuts, crushed
- Popcorn
- Crushed Maltesers
- M&Ms
- Rice Crispies / Cornflakes
- Glace cherries

We used chocolate chips to top it off but they're not really necessary.
Instructions
- Melt the butter and set it to one side.
- Gently melt the chocolate - we use the microwave in short sharp blasts so it doesn't burn.
- Mix the butter in with chocolate and stir in the golden syrup.
- Stir in the marshmallows, biscuits and any extra ingredients. We crushed up 100g of pistachio nuts to add to ours. Keep a handful of the marshmallows out to top the rocky road.
- Give it all a good stir and then press into a baking tray.
- Top with the marshmallows and chocolate chips if you're using them, pushing them gently into the mix.
- Pop in the fridge to set for at least two hours.
- I used a pizza slice to cut into squares and serve.
There were about six pieces left that came home with us and they tasted even nicer the next morning for breakfast. Or at least that’s what I was told by the two teenagers who demolished the last of it before I even made it downstairs in the morning.
