It’s been more than three months since I shared my last meal plan on here and I’d like to say that we’ve been sticking to our meal plan routine during lockdown but in all honesty, there’s not been a meal plan in sight.
I’ve really struggled with meal planning lately but one of my July monthly goals was to start getting my life sorted and one of the ways I’m going to do that is to take control of our mealtimes again.
I do need to be super organised though as most nights through the week, I don’t get home from work until just before 7 pm so if I don’t have something planned that the kids can cook for themselves before I get in then they’ll have already been snacking on whatever they managed to find that was easy to cook and they won’t want any proper tea.
So, this is a meal plan but I don’t think it’s necessarily a frugal meal plan because of the things I have planned.
Monday – Ready Meal Roulette
I could lie and tell you I’ve cooked everything from scratch but genuinely, I don’t have time for that right now with six days a week of getting home at 7 pm so I do have a fridge packed with convenience foods right now. I have some lovely ready meals for tomorrow night for Miss Frugal to pop in the oven when they get hungry and I’ll sort myself out when I get in.
Tuesday – Avocado on Toast
I know this isn’t a proper tea but Miss Frugal makes an amazing avocado on toast topped with eggs so hopefully, I can get her on board with making this for tea on Tuesday. She’ll make toast with mashed avocado on for her and with beans on for Master Frugal and top them both with eggs.
Wednesday – Spaghetti Bolognaise
I do have some bolognaise in the freezer that I’ll get out on Tuesday night to reheat on for tea on Wednesday. They can either have it with pasta or on top of jacket potatoes whichever they fancy.
Thursday – Mexican Chicken Nachos
I have some Instant Pot Shredded Chicken in the freezer that I’ll get out to defrost on Wednesday night. It can be heated up with some Mexican spice, some red onions and chopped peppers and them served on Nachos with some melted cheese, salsa and sour cream.
Friday – Minced Beef and Onions with Aunt Bessies giant Yorkshire Puds
Again, an easy meal from the freezer that I’ve batched cooked a couple of weeks ago so this will just need reheating in the oven with some giant Yorkshire Puds and some veggies.
Saturday – Homemade pizza
I’ll use some more Instant Pot shredded chicken for the topping here I think along with a tin of pineapple chunks that I have in the cupboard.
Sunday – Gammon Dinner
A super easy meal and cheap meal for a Sunday as I’ll pop the gammon in the Instant Pot and serve it with some mash, freezer veggies and some Yorkshire Puddings. I buy the small lean joints from whichever supermarket I’m in and they rarely cost more than a fiver or so.
I know, it’s not the best meal plan you’ve ever seen but right now, it’s us and it’s all I can manage in the current circumstances. I’ll be back to batch cooking and doing all things Domestic Goddess when I can. 😇
