So, it’s been a while since you’ve seen a meal plan over here (in fact, it’s been a while since I even shared a meal plan over on Meal Planning Made Easy if I’m honest but I promise that the lack of meal planning posts isn’t because I haven’t been doing it, it’s more that I’ve just been so busy and genuinely haven’t had time to share our meal plans with you.
I’m really conscious about what we’re eating at the moment as I really do want to get into better shape. Thanks to a mix of healthier eating and exercise, I’m back to my pre-lockdown weight which admittedly, wasn’t a healthy weight to start with but I’m happy to be back there and my aim now is to continue what I’m doing and get into a more healthy weight range.
Monday – Actifry Fajitas
It took me forever to get around to buying an Actifry because I just couldn’t see how it would be worth the money but so many people told me how amazing they were that I caved in. It was worth it alone just for the fajitas I can make with it – the kids have theirs in wraps with homemade guacamole, salsa and cheese and I have mine with rice or couscous which I’m currently loving.
Tuesday – Rice and vegetarian shawarma
I have a recipe of my own for chicken shawarma which is lovely and is super helpful but I discovered this plant-based shawarma a couple of weeks ago and love it! It’s super easy to cook and tastes lovely so I thought I’d serve it with some rice for tea this week. I thought I could mix it through with some extras (lettuce, cheese, refried beans, guacamole) to make it into a rice bowl.
Wednesday – Fish Pie and Veggies
I’m going to try and make a fish pie as I have some prawns and some of those fish in parsley sauce things in the freezer. I thought I could do something crazy with them and some green beans and sweetcorn.
Thursday – Peppered steaks and sweet potato fries
So, the peppered steaks are actually Quorn steaks rather than actual steaks which is a bit of a theme at the moment as we’re definitely eating a more plant-based diet than we have before. I don’t think we’re going to go full vegetarian but we’re definitely having more meat-free meals at the moment.
Friday – Taco Rice Bowl
I mean, there’s a bit of a theme here with this week’s plan but Master Frugal’s new specialty is a taco rice bowl made using Quorn mince and they taste AMAZING.
Saturday – Homemade deep-pan pizza
No idea what this is going to look like but I’ve been thinking about making our own version of a deep pan pizza for a while now so we’re going to do it next Saturday.
Sunday – Gammon Dinner
I’m going to make Gammon in the Instant Pot and potentially try making some Slimming World Roasties to go with it.
