Oh my word, how is it possibly March already?
Remember last week when I did all that batch cooking?
Well, it’s a good job that I did because I ended up unexpectedly working away for half the week so if I hadn’t have been so prepared then I can easily see last week descending into a week of takeaways and junk food without me here. 😉
It was brilliant to be so far from home and still be able to let the kids know what was for tea!
I still have some mince and onions and some bolognese in the freezer from my adventures last weekend and I made a big batch of Instant Pot shredded chicken yesterday to add to my little freezer store. One day this week, I’m hoping to make a big batch of homemade tomato sauce to freeze in portions to use as everything from topping pizzas to pasta bakes and next weekend, I’m planning on making a big batch of chicken curry.
Adding to the freezer gradually is going to get me back to the position where I was before where I could write a good couple of week’s worth of meal plans based just on what we already had in the freezer.
Anyway, here’s what we’ll be having this week…
Monday – Out for tea
The kids are at the Boro match tonight so they’ll have their usual burger and chips at the match.
Tuesday – Katsu Curry
I have a couple of sachets of Mayflower curry sauce in the freezer that I’m planning on using up to make my own version of Katsu Curry. I’m going to layer some chicken tenders that I have in the freezer on top of some rice and then pour the curry over the top. Interesting, hey?
Wednesday – Beef Casserole and Dumplings
It feels like it’s going to be a comfort food kind of week so I’ll pop a beef casserole in the slow cooker before I go to work on Wednesday and add in some dumplings when I get home. I don’t have a huge pack of beef strips for this so I’m not sure how much we’ll have in the way of leftovers but beef casserole rarely gets frozen in our house as someone will usually have it for lunch the next day.
Thursday – Hunters Chicken
This is the one exception to the week as it’s not a batch cooked meal. It is an easy one though as I have a jar of Hunters chicken sauce that I’ll pour over some chicken breasts before I leave for work. The kids can then just top with some grated cheese and pop in the oven when they’re ready for tea. It’ll be served with rice which I have in the freezer so that just needs to go in the microwave for 3 minutes.
Friday – Spaghetti Bolognaise
This is right out of the freezer as I have a batch of this ready to get out on Thursday night to heat up on Friday with some spaghetti.
Saturday – Homemade pizza
I’ll use the shredded chicken for the topping here I think along with a tin of pineapple chunks that I have in the cupboard.
Sunday – Gammon Dinner
A super easy meal and cheap meal for a Sunday as I’ll pop the gammon in the Instant Pot and serve it with some mash, freezer veggies and some Yorkshire Puddings. I buy the small lean joints from whichever supermarket I’m in and they rarely cost more than a fiver or so.
I’m away for a couple of days this week too so I’m hoping that this little plan should keep things ticking over.
