As of Friday afternoon, Mr Frugal and I have a week off work together. It’s actually the week we booked in so we could have a week’s family holiday and we were intending to take the kids out of school and go away for a week somewhere nice and warm.
But then the rules changed and we can’t take them out of school for the full week so we’re just going to have a nice weekend away this weekend starting as soon as they finish school on Friday. We haven’t decided yet what we’re doing or where we’re going but we definitely doing something!
So our meal plan is only Monday to Thursday this week at the minute but if we manage to get booked into a self catering cottage or caravan somewhere then I’ll be back for some self catering meal plan ideas because we want to keep the cost of the weekend down as much as possible!

Homemade fishcakes with chips and mushy peas
I make slow cooker chilli loads – it’s so easy to make and if you make a big batch all in one go, you can use it for lots of different meals. You’ve got your usual chilli and rice or chilli and naan breads or nachos. You can make chilli cheese wraps, chilli on jacket potatoes. You can even make a chilli lasagne if you fancy it.
I like to make things as easy as possible, to the point where Miss Frugal can make this for me while I’m getting on with something else.
All I do is add a pack of lean mince to the slow cooker with two tins of tinned tomatoes, some garlic (dried, fresh or puree) and a handful or two of chopped onions and a tin of baked beans (we hate kidney beans). I then add a teaspoon of cumin and a teaspoon of paprika, turn it on low and leave it for 6-8 hours on low.
Voila.
