At this time of year, the one recipe that should be at the top of your must-cook list should absolutely be this traditional Bubble and Squeak recipe!
Traditional Bubble and Squeak is made from cooked potatoes and cabbage, mixed together and fried but my Dad used to make his with whatever leftover vegetables we had on the day. We had it every Boxing day using our Christmas Dinner leftovers and at least once a month using Sunday Dinner leftovers often served with a poached egg on top and some slices of cold meat with it.
I make my own version now and it’s one of those tastes that remind me of my childhood, my Dad specifically which makes me enjoy it even more.
This isn’t a fancy dish by any means – in fact, Google tells me that the food writer Howard Hillman classes it as one of the “great peasant dishes of the world”. I’ve got no idea who lovely Howard is but if he means it’s the tastiest dish you can make super cheaply from leftovers then he’s absolutely spot on. That is what he means, right?
I usually cook cabbage and extra potatoes at Christmas because I know that I’ll be making my bubble and squeak recipe the next day and I’m pretty sure that if you try making it once yourself then I guarantee you’ll start doing this yourself.
I’m not going to lie though, it’s not a pretty looking dish at all, is it?

Traditional Bubble and Squeak Recipe
This traditional bubble and squeak recipe is just what you need to use up your leftovers after a roast dinner!
Ingredients
- 450g leftover mashed potato
- 300g leftover mixed cooked vegetables – e.g. cabbage, roast parsnips, green beans, brussel sprouts, carrots, cauliflower, broccoli or peas, chopped into small pieces
- A small amount of Olive Oil or a knob of butter to fry off your bubble and squeak
Instructions
- Add your cold mashed potato and leftover vegetables into a bowl. The version you can see in my photos today has cabbage, some mashed-up carrots, broccoli, a couple of chopped honey roast parsnips, and some crumbled-up stuffing. I also added in some grated mozzarella for some excitement but that's completely optional.
- Either heat your olive oil or melt your butter in a frying pan.
- You've got two options at this point - you can do your best to make neat and tidy little bubble and squeak rounds or you can just blob a dollop of your mix into the pan.
- Fry on both sides until it's crispy and a bit brown.
Notes
Just so you know - I've given rough amounts in my recipe but they are very rough and they're super flexible and depend completely on what you have leftover so please don't worry at all about weighing stuff out unless you prefer to cook that way.
Also, just so you know - I would NEVER add Brussel sprouts to my bubble and squeak but that's just me.
