I’ve made my famous (in my own head) recipe for roasted tomatoes so so many times over the years and about six years after I first shared it with you, I decided to share it again as the photos and instructions in the first recipe were so poor that they didn’t go even half way to showing you just how amazing this recipe really is!
Roasted tomatoes with lime, garlic and chilli….
You should know me by now, I like my recipes to be super simple, super tasty and super cheap and this recipe for roasted tomatoes ticks all three boxes! All you need are some cherry tomatoes, two cloves of garlic, a fresh chilli and a lime.
I got these posh cherry tomatoes in the reduced section last night which is what inspired the recipe today. I bought a lime and a garlic bulb and got a chilli out from the freezer (I freeze them when I see them reduced for times like this).
All you need to do is pop the cherries into an ovenproof dish, squeeze the lime over and cut into wedges to throw in with the tomatoes and add the chilli and lime, both finely chopped, into the dish.
Next you just need to put the dish in the oven on around about 180 c and cook them for around 15 minutes. It depends how small your tomatoes are as some could take less time in the oven and some could take longer – they’re done when the first few start to burst their skins.
They are the nicest roasted tomatoes that I’ve EVER tasted and I can’t even tell you how much you need to try them. What I would say though is that I tried to make them look all posh today so I left the cherry tomatoes on the vine – they looked good but it’s a nightmare to try and get squidgy tomatoes off the vine when they’re hot and you just want to eat them!
