My meal plans are a bit all over the place at the moment as I’m still getting used to Slimming World and learning to adapt meals that I know we all love so that I can continue to enjoy them whilst following the plan. I haven’t mastered it just yet so you’ll see that on a few nights this week I’m planning to cook two separate meals which I try not to do usually but there are meals I want to try that I know not everyone in the house will enjoy.
I’m popping to the shop probably four nights a week at the minute but just to check the reduced section for reduced fruit and veg and I also have a full drawer of different frozen fruit and veg in the freezer for when I don’t find any bargains.
Lunches are easy for the kids as Miss Frugal is on school dinners and Master Frugal is on packed lunches and even Mr Frugal usually buys lunch at work as his canteen is heavily subsidised so it’s cheaper to buy it there than to take food in.
That just leaves me and at the moment, my lunches are taking a little bit of planning ahead so I always have something with me to eat – if I don’t then I’m likely to buy something from the canteen which will no doubt cost me more than taking my lunch in would have done and also won’t be as healthy or as filling as a lunch I prepare.
Here’s my lunch plan….
Monday – Pasta salad with leftover chicken, peas, sweetcorn, red onion and green pepper mixed with a tablespoon of light mayo.
Tuesday – I get weighed on the Tuesday night so it’ll be salad for lunch today. I won’t buy all the salad bits for this as I can get a ready made, good sized salad box in our local supermarket for 89p which includes everything I would buy in just the right quantities to avoid waste. If it was more than me having the salad or if it was planned to go with tea later like we have later in the week then I’d buy all the bits and make my own. As it is this works out around the same price as just the lettuce I’d buy to go in the salad and saves me a bit of time.
Wednesday – Chunky leek and potato soup in my flask with some of the leftover gammon from Tuesday’s tea in it. I’ll also take in some crispbreads and Laughing Cow triangles as my healthy extras as today is a longer day than normal at work for me.
Thursday – I’ll probably take in some of last night’s leftover risotto to heat up for today’s lunch.
Friday- I’ll add some leftover from last night’s chicken and veg to some pasta for today.
Saturday and Sunday – Lunches are always soup at the weekend since I got my lovely soup maker for Christmas.
And if I have the urge to snack then I’ll have some Slimming World Quiche ready in the fridge!
