I thought I’d do a bit of a ‘What I ate in a week’ post today but with a Slimming World twist as I’m at the stage where I need a bit of extra motivation to keep at it and I feel like this could do the trick!
I haven’t included everything I’ve eaten though, you’re just going to get my evening meals. I’ve done a week’s worth of Slimming World packed lunches in the past though if you want to check that out.
Day one – Saturday
I made a homemade Slimming World Doner Kebab for tea on Saturday but because everyone was at the football, I left it on the keep warm function of the slow cooker for longer than normal so it was kind of dry. It still tasted nice but I ended up using some garlic sauce to counteract the dryness.
Day two – Sunday
I had one of my favourite Slimming World meals on Sunday – homemade Slimming World pizza with sweet potato wedges. The pizza is syn free if you class the wholemeal wrap and the cheese as part of your healthy extra allowances.
Day three – Monday
We were planning on having ‘big mac in a bowl’ for tea on Monday but ended up switching that out for a mushroom risotto as I went to get the mince out of the fridge on Monday night and somehow, I’d got my dates mixed up and it was two days out of date! which was so annoying. I hate waste like that and I’m normally so much better at keeping an eye on dates and switching things about if I need to use something up.
Day four – Tuesday
I had Slimming World pizza AGAIN tonight which is something I need to get out of the habit of because I know what I’m like. I start to eat very samey meals which makes me feel bored with what I’m eating and that’s when I struggle to stick to the plan.
Day five – Wednesday
I made ham and chicken pie with broccoli and carrots and it was amazing but I forgot to take a photo of the finished pie. I did get a picture of the filling though…
This is red onions, leeks, mushrooms, shredded ham and a little bit of chicken with the sauce being made up of some vegetable stock and my healthy extra Laughing Cow cheese triangles. I then topped it with mashed potato and it was soooo tasty!
Day six – Thursday
We had sausage, egg and chips traybake tonight using the Slimming World chips that you can buy from Iceland. It worked out OK but as nice as the recipe turned out, I must admit that I much prefer my own Slimming World style chips so we’re going to try this again next week. I did forget to take a photo of his but that’s probably for the best. 😉
Day seven – Friday
This is probably the least appetising meal I’ve ever shared a photo of but it tasted AMAZING.
It’s basically a tin of beans, a tin of ham, some mushrooms, baby plum tomatoes and two chopped peppers heated up in a pan together. I then stirred through three eggs and let them scramble in the mix and yes, I know it probably sounds awful and most definitely looks awful but it tasted amazing and was so filling. Mr Frugal shared it with me and there was plenty to share between us with some leftover!
So there you have it, a week’s worth of Slimming World meals.
PS – I know I haven’t been doing my weekly weight loss journey post recently but that’s more because they don’t make particularly interesting reading I don’t think. I might have a bit of a re-think about how I can do a weekly update that won’t send you to sleep but until then, I’ll just update over on Instagram.
