A couple of weeks ago, I shared my ‘What I ate in a week – Slimming World Style‘ post and so many of you messaged me to ask me to do it again as you found it so helpful. So, by popular request, here’s another week’s worth of Slimming World meals!
As before, I haven’t included everything I’ve eaten through the week, you’re just going to get my evening meals. – mainly because I’m too forgetful to take photos of lunches I’ve done a week’s worth of Slimming World packed lunches in the past though if you want to check that out.
Day one – Saturday
This is our favourite Saturday night tea to the point that my phone seems to be clever enough to suggest I open the notes app at 6pm every Saturday so I can see the notes of the different quantities of each spice that we use.
We call it Instant Pot Paella just because we use paella rice and it has chicken and prawns in but really it’s nothing like traditional paella. I do have the recipe for this to share next week but the main proportions to know for the Instant Pot are 2 cups of paella rice to 4 cups of chicken stock. I saute off the chicken and prawns with some garlic and whatever veg I want to include, usually red onion and green peppers and the spices we like and then pop it on pressure cook for 7 minutes. We’ve been using the So Easy seasonings as they’re syn free and really flavourful.
You could easily just make this in a big pan though so don’t worry if you don’t have an Instant Pot.
(On a side note: How clever is SIRI to learn my habits! She even tells me when I get in the car on a Saturday morning the drive time to my Slimming World group and how good/bad the traffic is going to be.)
Day two – Sunday
I really needed comfort food today as it was so cold and miserable outside so I went for my Slimming World Homity Pie with a couple of Quorn sausages on the side. It was amazing and exactly what I needed! I love making this as this is a bit of a simplified version of Homity Pie which is super cheap and super easy to make.
Day three – Monday
Before I tell you about tea, I wanted to share lunch which was an odd version of a Slimming World pizza thanks to the fact that we didn’t have any tuna in when I went to make it and I couldn’t open the jar of passata for the base.
I ended up using some Laughing Cow cheese triangles for the base and just mushroom as the topping and you know what, it tasted so nice that I would definitely make it that way again in future.
For tea on Monday, we had some slow cooker gammon and some Slimming World roasties which weren’t successful enough for me to share the recipe with you just yet! Seriously they were a bit of a fail but we’re trying again this weekend hopefully so watch this space for a recipe. Possibly!
Day four – Tuesday
Tonight I had some fully loaded Slimming World quiche with a jacket potato and beans. I used pretty much every vegetable in the fridge so had spinach, peas, red onion, tomatoes, chicken and a little bit of leftover gammon too. It was nice but didn’t really feel like a meal if you know what I mean so I think I’ll stick to having quiche for lunch rather than tea as I felt hungry again later on.
Day five – Wednesday
I have 1 syn chicken chow mein for tea tonight and it was as tasty as it always is! I should point out that I don’t use chopsticks to eat it with and the things that look like chopsticks that are in the photo above are actually a pair of bamboo toaster skewer things that you use to get your little things out of a toaster.
Day six – Thursday
Dirty fries were on the menu tonight with a couple of Slimming World burgers that I bought from Iceland. I wasn’t overly keen on the burgers and much prefer making my own but I decided to go the lazy way which I won’t do again. The Dirty fries were amazing though and more than made up for the disappointment of my burgers.
Day seven – Friday
I had tuna pasta for tea tonight made with tuna, sweetcorn and peas with some light mayo to bind it together. I’m not a huge fan of this as a meal but I was late home from work and Mr Frugal had made more pasta than he needed so I was using it up.
I’ve got some new recipes that I’m playing with so hopefully next time I do one of these I’ll have some more variety!
