Am I the only person who finds school holidays a nightmare as far as meal planning goes?
Things never seem to go according to plan when the kids are off school – there’s last minute sleepovers, days out that interfere with tea time, extra friends for tea, kids not wanting to come home at tea time and all sorts of other things sent to try my meal planning skills (and budget)!
All good stuff and I wouldn’t want to change the way we spend our school holidays in any way but it definitely makes it harder to stick to meal planning (well it does for me anyway).
But that was last week! They’re back at school this week so there should be no issues whatsoever in sticking to our meal plan (wishful thinking?).
Here’s what we’re having (although if you want to see the pretty version that I have on my fridge door, you’ll need to look at Meal Planning Made Easy)….
Monday
Macaroni Cheese with slow cooker gammon on the side.
Tuesday
Homemade Lasagne – I’ll do the bolognaise in the slow cooker the day before and I’ll make extra cheese sauce when I do the macaroni cheese tonight.
Wednesday
Beef Stew with dumplings.
Thursday
Honey and mustard chicken with rice using a jar of sauce I got on offer. I think the kids will probably have chicken egg fried rice though.
Friday
Tuna Pasta Bake
Saturday
Egg, chips, bacon and beans are on the menu for tonight – Mmmmmmm!
Sunday
If I can find a nice (cheapish) piece of slow cooked brisket later in the week then we’ll be having brisket for tea on Sunday.
I need a new meal to cook for next week – any ideas?
