This week’s #BetterWithLeerdammer campaign is definitely making for some interesting lunches and today was no different as we had chicken and cheese wraps which I controversially served with a sweet Summer salad. The flavour combinations are not something I would have thought of but I really enjoyed it, as did everyone else. It also encouraged Master Frugal who is a fussy eater at the best of times to try cold chicken – something he’s never done before which may not seem like much to you but to me, it was HUGE!
The sweet Summer salad was made up of lettuce, mango, strawberries, avocado and walnuts….
I chopped all of the ingredients up into small chunks and dressed half with a little balsamic vinegar for Mr Frugal and I and left the other half plain for the kids as they’re not keen on that as a dressing.
For the wraps themselves, I sliced some cooked chicken and laid that along the middle of the wrap. Because the chicken was quite chunky I used Leerdammer Toastie and Burger which is a thicker slice than normal Leerdammer. As the name suggests it’s great with burgers and in toasties because of it’s thickness and the way that it melts. Thinking about it, I should have used i yesterday with the toasted baguette shouldn’t I? Oh well, the baguette was delicious as it was so all’s good!
Anyway, I then topped the chicken and cheese with a little of the sweet Summer salad, rolled it up and added some more of the salad to make it look pretty (and because it was delicious and I wanted more).
